CIDRE POIRÉ JORASSES CLASSICUM

With a delicate perlage, our pear cider has a straw-yellow colour with golden highlights. The Critchen pear stands out on the nose with light notes of custard.

 The taste is rich and smooth, with hints of candied fruit and a pleasant cleanliness that entices you to sip.

The Critchen pear is an old and rare variety, appreciated for its strong aromatic profile and perfect balance between sweetness and tannins.

HARVESTING AND CRUSHING

The apples, harvested in 36 hours and sent to Savoy, are pressed the day after arrival at the cider house according to a shared protocol, to obtain the must for our sweet cider.

PASTEURISATION AND FERMENTATION

The cider ferments slowly at a controlled temperature, without additives. Once the ideal alcohol content has been reached, it is pasteurised using a gentle method, without sulphur dioxide.
